These muffins are perfection (maybe not the healthiest of recipes but sometimes you have to indulge).  I love the lemon and blueberry together and so does Peter which makes these a success!  My mother has been making these since I was little.  Sometimes she does a combo of blueberry and cranberry if you want a sweet and tart combo.  Here's the recipe.

2 cups flour

1/2 cup sugar

3 tsps baking powder

Rind of 1 lemon

1 egg

1 cup milk

1/2 cup butter, melted

2 cups fresh or frozen blueberries or a mix of cranberry/blueberry

Mix flour, sugar, baking powder and lemon rind in large bowl.  Beat egg and milk in medium size bowl and mix in butter.  Using mixer, add egg mixture to dry ingredients (mix on low speed).  Stir in blueberries.  Fill muffin pans 2/3 of the way and bake at 400 degrees for 20 minutes.  Enjoy!
