Amanda, We eat breakfast for dinner all the time. I love making pancakes especially. But our other go-to is quiche. Its easy, everyone loves it and most importantly, I can sneak veggies in.
My recipe for quiche reminds me of all the recipes you post... off the cuff.
3/4 c milk
2 cloves garlic
1 tbsp olive oil
cheddar or any available cheese - as much or as little as you like
spinach or any other veggie
1/4 yellow onion, chopped
frozen pie crust
Preheat oven to 375 degrees. Sautee oil, garlic and onion on med-low heat. Add spinach or veggies until wilted or cooked. Spread on the bottom of the frozen pie crust. Combine eggs and milk and whisk together. Add the cheese to the egg mixture and pour over spinach/veggie mixture. Bake in the oven for 25 minutes or until toothpick can be removed dry.
Then gobble it up.
